Soy Vay Potato Pancake Teri-latkes

Ingredients
- 4 potatoes
- 1 chopped onion (or 1/2 cup chopped)
- 3 large eggs
- 1/4 cup Soy Vay® Veri Veri Teriyaki®
- 1 tsp. salt
- 1/2 tsp. pepper
- 1/2 tsp. baking powder
- 1/4 cup flour
- vegetable oil for frying
- 1/2 cup sour cream
- 5 scallions (for garnish)
Prep

1.Grate the potatoes.

2.Take half the grated potatoes and chop finely.

3.Place all of the potatoes in a large mixing bowl and cover with water.

4.Let stand at least 15 minutes.

5.Dry the mixing bowl out with paper towels.

6.Place the potatoes back into the bowl.

7.Thinly slice the scallions.

8.Chop the onion.

9.Using a large frying pan, heat up about 1/4 inch of oil over medium heat.
Cook

1.Add the onion, eggs, Veri Veri Teriyaki sauce, salt, pepper, baking powder and flour to the potatoes

2.Stir well. Add more flour if too much liquid accumulates in the bottom of the bowl.

3.Spoon the potato mixture into the hot oil and press down lightly to flatten.

4.Fry until golden brown, about 4 minutes per side.

5.Transfer to paper towels to drain.

6.Repeat until the batter is used up.

7.Arrange the latkes on a platter with sour cream in a separate bowl for dipping.

8.Garnish with scallions.

9.Serve hot.
