Saucy Asian Meatballs

Ingredients
- 1 cup rice
- 2 green onions
- 1 lb. ground beef
- 1 large egg
- 1/2 cup breadcrumbs
- 2 Tbsp. Soy Vay® Veri Veri Teriyaki®
- 1 Tbsp. vegetable oil
- 1/4 cup pineapple juice
- 1/4 cup tomato juice
- 2 Tbsp. dry sherry or apple juice
- 1/8 tsp. garlic powder
- 1/8 tsp. ginger powder
Prep

1.Prepare rice according to package instructions.

2.Chop the green onions.

3.In a large mixing bowl combine ground beef, onion, egg, breadcrumbs and the Veri Veri Teriyaki Sauce.

4.Knead the mixture with your hands until all the ingredients are incorporated.

5.Roll the meat mixture into balls about 2 inches in diameter.

6.In a large frying pan or wok, heat the vegetable over high heat.
Cook

1.Cook the meatballs until browned on all sides and an internal temperature of 160°F has been reached.

2.Drain and discard excess fat. Set the meatballs aside.

3.In a small saucepan over high heat, combine the pineapple juice, tomato juice, sherry, garlic powder and ginger powder.

4.Bring to a boil and reduce heat to medium-low.

5.Simmer for 5 minutes until sauce starts to thicken.

6.Pour the sauce over the meatballs and stir until everything is well coated.

7.Plate the meatballs over hot rice.

8.Serve immediately.
