Ingredients

  • 1 cup rice
  • 2 green onions
  • 1 lb. ground beef
  • 1 large egg
  • 1/2 cup breadcrumbs
  • 2 Tbsp. Soy Vay® Veri Veri Teriyaki®
  • 1 Tbsp. vegetable oil
  • 1/4 cup pineapple juice
  • 1/4 cup tomato juice
  • 2 Tbsp. dry sherry or apple juice
  • 1/8 tsp. garlic powder
  • 1/8 tsp. ginger powder

Prep

  • 1.
    Prepare rice according to package instructions.
  • 2.
    Chop the green onions.
  • 3.
    In a large mixing bowl combine ground beef, onion, egg, breadcrumbs and the Veri Veri Teriyaki Sauce.
  • 4.
    Knead the mixture with your hands until all the ingredients are incorporated.
  • 5.
    Roll the meat mixture into balls about 2 inches in diameter.
  • 6.
    In a large frying pan or wok, heat the vegetable over high heat.

Cook

  • 1.
    Cook the meatballs until browned on all sides and an internal temperature of 160°F has been reached.
  • 2.
    Drain and discard excess fat. Set the meatballs aside.
  • 3.
    In a small saucepan over high heat, combine the pineapple juice, tomato juice, sherry, garlic powder and ginger powder.
  • 4.
    Bring to a boil and reduce heat to medium-low.
  • 5.
    Simmer for 5 minutes until sauce starts to thicken.
  • 6.
    Pour the sauce over the meatballs and stir until everything is well coated.
  • 7.
    Plate the meatballs over hot rice.
  • 8.
    Serve immediately.
