Peanut Noodle Salad

Ingredients
- 1 lb. spaghetti
- 1/2 cucumber
- 2 scallions
- 1 carrot
- 1/2 cup Soy Vay® Veri Veri Teriyaki Marinade & Sauce
- 1/4 cup smooth peanut butter
- 3 Tbsp. rice vinegar
- sriracha sauce, to taste
Prep

1.Cook the noodles according to package instructions.

2.Drain and rinse with cold water. Set aside.

3.Peel, seed and slice the cucumber into matchsticks.

4.Thinly slice the scallions on the diagonal.

5.Grate the carrot.

1.In a large mixing bowl, whisk together the Veri Veri Teriyaki sauce, peanut butter, rice vinegar and sriracha until smooth.

2.Add the noodles, toss to coat.

3.Gently fold in the cucumber slices and carrots, and garnish with the scallions.

4.Serve immediately or chill until ready to eat.
