Long Life Tofu and Veggie Noodle Stir Fry

Ingredients
- 1/2 lb. soft egg noodles
- 2 Tbsp. vegetable oil, divided
- 1 cup cubed tofu
- 1/2 red pepper
- 3 green onions
- 1/2 cup snow peas
- 1 package of shiitake mushrooms
- 2 Tbsp. Soy Vay® Hoisin Garlic Marinade & Sauce
Prep

1.Prepare noodles according to package instructions.

2.Drain and rinse to cool.

3.Cube the tofu.

4.Remove the stems from the mushrooms.

5.Chop the mushrooms, red pepper and green onions.

6.Heat 1 tablespoon of the oil in a large nonstick frying pan or wok over medium heat.
Cook

1.Stir-fry the noodles until warmed through.

2.Remove from pan and set aside.

3.Add the rest of the oil to the pan and cook the tofu until it turns slightly brown and crispy.

4.Add the mushrooms, red pepper, green onions and snow peas and cook until tender, about 5 minutes.

5.Stir in the Hoisin Garlic sauce and cook until everything is evenly coated and warmed through.

6.Place the vegetables over top of the noodles.

7.Add more Hoisin Garlic sauce if desired.

8.Serve immediately.
