Hoisin Garlic Chicken

h. Wilcox

3 chicken breasts cut into 1 inch cubes
1/2 cup flour
1/4 cup cornstarch
1/2 cup water
1 egg
1/2 teaspoon salt
1 small onion
1 bell pepper
3/4 cup of Soy Vay Hoisin Garlic Asian Glaze and Marinade
2 cups peanut oil (enough to cover bottom of pot to 1 inch)

Make batter by combining flour, cornstarch, egg, salt, and water, and coat chicken cubes in batter.

Heat 1-2 inches of oil in a pot. When hot add 1/2 of chicken in a single layer.

Rock the pot side to side so oil can coat the top of the chicken. Flip after 5 minutes. Cook until golden, about 10 minutes total, and drain on paper towels. Cook the other half of the chicken in the same way.

Cut the onion and pepper into small cubes. Combine chicken, onion, and pepper in a 9 x 13 dish. Add 3/4 cup of Soy Vay Hoisin Garlic Asian Glaze and Marinade. Stir to coat well.

Cover and cook at 400 degrees for 30 minutes.
